Job Description

We are a sushi restaurant that opened in August 2023 in Tropea, Italy, offering authentic Japanese cuisine and Edo-style sushi. We are seeking capable individuals who want to work in Southern Italy and make an immediate impact!

The owner and chef, an Italian with experience living in Japan, can communicate in Japanese. The restaurant seats up to 24 guests (10 at the open kitchen counter and 14 at tables). We aim to redefine the common perception of sushi by offering authentic Japanese cuisine and Edo-style sushi with heart. Our menu mainly features an omakase course, with a selection of Japanese sake, local wines, and Japanese beers. We boast one of the largest selections of Japanese sake in Italy. Due to the town’s characteristics, our business peaks in the summer and slows down in the winter.

Located at the toe of Italy's \"boot,\" Tropea is a top tourist destination known for its Greek mythological coastline and cobalt blue sea. While not widely known in Japan, Tropea offers a unique opportunity to thrive as one of the few Japanese individuals in the area, interacting with locals.

- Recruitment Background:
We are expanding our operations and seeking sushi chefs to work with the Italian owner due to previous staff relocations.

<Positions Available>
- 1. Short-Term Assistant Chef (Busy season: May to October)
- 2. Medium/Long-Term Assistant Chef (1 year or negotiable)

<Responsibilities>
Cooking, customer service, preparation, organizing and tidying the restaurant, creating new menu items

Requirements

<Requirements> - Experience: At least one year of practical experience in general Japanese cuisine, sushi, or kaiseki (experience with fish is a plus), sushi restaurant experience preferred.
